This sauce is made each year with the autumn flush of chillis that we are offered by the passionate amateur gardeners and chilli heads that come to the Farmers Market in Hastings. It gets released at the Matariki Festival celebrating the appearance of the constellation Pleiades, or the Seven Sisters, which is the signal to start planting new season crops.

It is flavoured with seven different peppers, which include jalapenos, both plain and smoked, Habanero, cayenne and roasted peppers. All this laid on a base of tomato and sultanas adds up to a spicy but well balanced blend of hot, sweet and acids.

I like to use it as a flavour garnish, swirled into a bowl of pumpkin soup, or around a stack of corn friters, with a sprinkle of fresh chopped coriander. it also works well in chilli con carne.
